How does LSU sign 5 star recruits from out from under us?

From what I recall reading some rumors some time ago, in the case of Pickett, he had a good relationship with Raymond while he was at UF, but since he is now at LSU, that's where he signed.
As for Thomas, the rumor I recall was that UF wanted him on the interior, but he wanted to play tackle, and be payed like a tackle and LSU obliged.
With the way transfers are nowadays, it's still possible they both end up at UF eventually.
